Lemon blueberry greek yogurt muffins

I have to admit to being a little biased when it comes to baked goods.
I mean, I have a pretty big sweet tooth so I’m not too picky when it comes to satisfying it (I even ate the black liquorice jelly beans when I ran out of the other flavours), but I tend to give a bit of a side eye to anything that doesn’t involve chocolate. Apart from ice cream, anyways… chocolate is pretty much at the bottom of the list when it comes to that one.
Everything else, though? It’s all the chocolate, all the time.
Well, maybe not all the time… I usually lean more towards gummy candies (helloooooo jelly beans!) than I do straight up chocolate bars, but you get what I’m saying. If it involves some kind of dough, it better come with chocolate.

So why, after all that talk of chocolate love, am I giving you a recipe that’s very much lacking in chocolate? Well… that’s an excellent question.
Because I’m trying to expand my horizons?
Because I [sort of] realize that not everyone is as crazy for cocoa as I am.
Because I had a tonne of blueberries that needed to be used up and figured that I should step away from the chocolate chips for a while?
Let’s go with that last one.

Blueberries are, hands down, my favourite berry, and I think I fell in love with them even more when I discovered how amazing they taste when paired with lemon.
I mean, have you ever tried drizzling a little bit of lemon juice over fresh blueberries and then sprinkling it with some coconut sugar? To.die.for. But I couldn’t exactly share that kind of a recipe with you guys since it’s… well… it’s berries, lemon juice, and sugar. So I threw in some flour, eggs, and Greek yogurt, and made muffins instead…

If you’ve never tried baking with Greek yogurt, then you’ve seriously got to give it a shot because it helps make the most ridiculously soft and tender baked goods. And if you’ve never tried the lemon blueberry combo, then you’ve seriously got to give that a shot as well because it will blow.your.mind. I’ve always kind of turned my nose up at lemony desserts, thinking they’d be sour and taste strange, but I’m [literally] eating my words because the lemon adds the just the right amount of zing and pairs perfectly with the blueberries.
Other than that, my only advice is to not skimp on the blueberries. Not only do they add a little bit of moisture to the finished muffins, but they just happen to be in season right now, so it’s a good idea to take advantage of that. Just give the muffins a little bit of time to cool down before biting into them, because yeah… those hot blueberries are like little molten lava pits. Hope you enjoy!

Lemon Blueberry Greek Yogurt Muffins

Yields: 12 muffins
Ingredients
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ½ cup plain Greek yogurt
  • ½ cup coconut palm sugar
  • ¼ cup unsweetened applesauce
  • 2 Tbsp. honey or maple syrup
  • 1 tsp. vanilla extract
  • 2 large eggs
  • juice and zest of 1 medium lemon
  • 1 cup fresh or frozen blueberries**
Instructions
  1. Preheat oven to 350F and prepare a muffin pan by spraying cavities with cooking spray or greasing them with oil. Set aside.
  2. In a medium-sized mixing bowl, combine flour, baking powder, and salt. Set aside.
  3. In a separate large mixing bowl, combine Greek yogurt and sugar, mixing until the sugar dissolves and the mixture becomes smooth. Add applesauce, honey, vanilla extract, lemon juice, and lemon zest, mixing until well incorporated. Add eggs, one at a time, beating well after each addition.
  4. Gradually add flour mixture to yogurt mixture, mixing gently until just combined. Fold in blueberries.
  5. Divide batter evenly among the 12 muffin cups, filling about ¾ of the way full. Batter will be on the thicker side, so use a spoon to scoop it in. Sprinkle with additional blueberries, if desired.
  6. Bake muffins for 20-22 minutes, or until top is firm to the touch and toothpick inserted into the centre comes out clean. Allow muffins to cool in pan for ~10 minutes before transferring to a wire rack to cool completely.

I hope you all had a great weekend and hopefully many of you have a short work week as well.  My weekend was filled with running, biking, pulling weeds, and working in my vegetable garden. Let’s talk about weeds for a minute. Why are they necessary other than to bug the crap out of you? Our side yard is the forgotten area on our property and it’s here that the weeds like to grow and spread like the plague.

When I went around to that forgotten side yard I stood there with my mouth open staring at 3 foot tall weeds. I was so embarrassed, how had I let it get that bad! I spent the next hour pulling and spraying them with weed killer and telling myself that I would never let them get that out of control again….we’ll see if I stick to it. Please tell me I’m not the only one that battles weeds and occasionally finds a patch that are as tall as small trees?

My zucchini and summer squash plants are huge and finally have blossoms and teeny tiny zucchini starting to grow. My tomato plants are also huge and have a few flowers on them which hopefully means that my sweet cherry and grape tomatoes are on the way. Nothing makes me happier than harvesting and eating vegetables from my own garden! One of the things I love to make with my tomatoes are these easy and fun Mini Caprese Cups.

An easy to make one bite appetizer!Mini Caprese Cups are simply half a cherry tomato, a small basil leaf, and a half or whole mini mozzarella ball arranged in a mini phyllo cup. If you’ve never used fresh mozzarella you are in for a treat. The taste is incomparable to the regular block mozzarella and I promise you will love it! Once all the cups are filled I sprinkle them with salt, pepper, and a drizzle of balsamic glaze. It’s the perfect summery one bite appetizer that can be made in 15 minutes or less.

15 mini caprese cups
Ingredients
  • 15 mini phyllo cups
  • 8 cherry or grape tomatoes, halved lengthwise
  • 8 mini fresh mozzarella balls, halved
  • 15 small basil leaves
  • Balsamic glaze for drizzling, (I used the balsamic glaze recipe drizzled on this pizza)
  • Kosher salt and fresh cracked black pepper for sprinkling on top
Instructions
  1. Arrange half of a cherry tomato, half of a mini mozzarella ball, and one small basil leaf in each mini phyllo cup.
  2. Sprinkle kosher salt and fresh cracked black pepper over the tops of the mini caprese cups.
  3. Drizzle balsamic glaze over the tops of the mini caprese cups.
  4. The mini caprese cups are best if eaten within an hour after making them to prevent the phyllo cups from becoming soft.

NO FRY – MEXICAN FRIED ICE CREAM RECIPE

So, we all love that awesome treat at the end of a truly great, authentic Mexican meal known as Fried Ice Cream, right? What if I said I can help you make that right at home AND without even frying it!? Would you be my BFF? My Foodie Friend Forever and Ever? Maybe just come back and visit me again to see what-else is coming out of my Vegas Kitchen? Ok, deal.
When my dad remarried the woman I oh-so lovingly referred to as my step-monster was trying to impress my brother and I. After dinner one night she told us she was making a special treat, Mexican Fried Ice Cream. Being that she was Italian combined with the fact that she said she wasn’t even going to fry it, we had our doubts. We half hoped she’d bomb so we didn’t have a reason to like her and half hoped she could pull it off… because FRIED ICE CREAM! Long story short, she totally pulled it off and I’ve been making it for my kids now for years. It’s a fantastic kitchen hack and saves a whole lot of calories since there’s no deep frying. It’s super easy and quick to make as well. This fried ice cream will soon move to the top of your family’s ‘Mom Pleeeease’ list for dessert! Take a look…

Easy Foodie Kitchen Hack To Make Fried Ice Cream Without Actually Frying It! How Cool Is That? Tastes Just As Good As Your Favorite Mexican Restaurant!

Serves: 8-10
INGREDIENTS
  • 5 Cups Corn Flakes
  • ½ Cup Butter (not margarine)
  • 3 TSP Cinnamon
  • 5 TSP Sugar
  • Your Favorite Ice Cream (for traditional, use Vanilla)
INSTRUCTIONS
  1. Form Ice cream into balls about the size of a small apple (I used a soup ladle to scoop and a spoon to help form the balls)
  2. Place in freezer on cookie sheet covered with wax paper for 15-20 minutes.
  3. Pour corn flakes in food processor and crush well. (you can also place in sealed zip-loc baggie and smash with bottom of plastic cup, fun for the kiddies to help!)
  4. Melt butter in a medium pan over medium heat. Careful not to burn.
  5. Stir in crushed corn flakes and cinnamon stirring constantly, about 3 minutes or until golden brown.
  6. Remove from heat, let stand for 1 minute and stir sugar into mixture.
  7. Pour into a shallow dish and allow to cool. (I used my pie pan)
  8. Place frozen ice cream balls one at a time into mixture and roll around to evenly coat.
  9. Place back in freezer for just about 10 minutes to re-harden.
  10. Top with a nice drizzle of chocolate syrup, whipped topping and of course cherries.
  11. ENJOY!

SPARKLING BLACKBERRY LEMONADE

INGREDIENTS
  • 7½ tablespoons Kraft Country Time Lemonade Starter (Classic Lemonade)
  • 2 tablespoons sugar
  • 1⅓ cup ice
  • 4 cups club soda
  • 1 cup blackberries
  • 1 lemon, sliced
INSTRUCTIONS
  1. Place 1½ tablespoons Lemonade Starter in a small dish that is wide enough to dip the rim of a glass in. Place sugar in a separate small dish. Dip the the glass rim the lemonade starter and then the sugar.
  2. Mash up 2 blackberries in the bottom of each glass* and then add 1½ tablespoons Lemonade Starter to each. Add ⅓ cup ice to each glass and then fill with club soda. Add additional berries and lemon slices for garnish and serve.
NOTES
Instead of making in individual glasses you can place 8 blackberries in a pitcher to mash and then add all the ice, club soda, and additional blackberries and lemon slices and then just pour into the glasses.

Vanilla Pannacotta with Mango Mousse…Want to make a dessert that is really easy to make and would earn you lot of accolades? Pannacotta it is then. I love mangoes and got a can of puree recently. So thought to pair a mango mousse with pannacotta. It came out delicious. I made it in shot glasses and it was perfect size for a single serving. So here is the recipe to make Vanilla Pannacotta with Mango Mousse

RECIPE TO MAKE VANILLA PANNACOTTA WITH MANGO MOUSSE

VANILLA PANNACOTTA WITH MANGO MOUSSE

INGREDIENTS
  • For Pannacotta
  • Heavy cream - 500 ml
  • Granulated sugar - 5 tbsp
  • Vanilla extract - 1 tsp
  • Gelatin powder - 2 tsp
  • Cold water - 6 tbsp
  • For Middle mango layer
  • Mango -1 ( cut into small pieces )
  • Mango puree - 1 cup
  • Sugar - 2 tbsp ( Add only if using unsweetened mango puree )
  • Gelatin - 2 tsp
  • Cold water - 6 tbsp
  • For mango mousse
  • Mango puree - 1 cup
  • Sugar - 5 tbsp (  use only if using unsweetened mango puree )
  • Whipped cream - 2 cups
  • Gelatin - 2 tsp
  • Cold water - 6 tbsp
INSTRUCTIONS
  1. For Pannacotta
  2. Sprinkle the gelatin over cold water in a bowl and let it rest for 5 minutes
  3. Heat sugar and cream until sugar is melted
  4. Do not over heat the mixture
  5. Remove from heat and mix vanilla extract
  6. Pour the mixture over the gelatin and stir until gelatin is dissolved in the mixture
  7. Let the mixture cool for 2-3 minutes
  8. Pour in the desired glasses till ⅓ rd and refrigerate the glasses for 5-6 hours
  9. Middle Mango layer
  10. Sprinkle the gelatin over cold water in a bowl and let it rest for 5 minutes
  11. Add sugar in mango puree and heat till sugar is dissolved ( if using sweetened puree, just heat the puree a little bit )
  12. Remove from heat and pour the mixture over the gelatin and stir until gelatin is dissolved in the mixture
  13. Let the mixture cool for 2-3 minutes
  14. Stir in the mango pieces
  15. Pour on top of the pannacotta to next ⅓ rd of the glass and refrigerate for 5-6 hours
  16. Cool for 5-6 hours
  17. Mango mousse
  18. Sprinkle the gelatin over cold water in a bowl and let it rest for 5 minutes
  19. Heat mango puree and sugar till sugar is dissolved  ( if using sweetened puree, just heat the puree a little bit )
  20. Pour over gelatin and stir until gelatin is dissolved in mixture
  21. Fold in the whipped cream
  22. Pour the mixture in a piping bag and fill the glasses till top
  23. Cool for 5-6 hours
